Frantoio Cerquozzi has been producing olive oil for 7 generations on their 300 acre property in Frosinone, Italy. They have the only mill in town and control every aspect of producing the olive oil from start to finish. This is a key feature and the Cerquozzi family has a long history of doing this 1 thing very well.

With an acidity level of just .13, this olive oil is extra, extra virgin! The range is from 0-0.8, with .8 bordering on "virgin" classification. Very few olive oils are this virgin.

Even more importantly, this olive oil is packed with high levels of polyphenols and oleocanthals which attribute to its anti-inflammatory benefits. You will notice a bit of a burn in the back of the throat - that's a good thing. The more the burn, the more the polyphenols. Got a cold? Take a shot of olive oil!

Olive oil is one of the most counterfeited foods on the planet. You must know your source. And the best sources are estates which control the entire production line of the olive oil, from growing the olives, to picking and milling them, to packaging! Olives become rancid very quickly so its important that your olive oil come from a single producer who grows all the olives on site and mills them as well! Especially while they are green.

If you're not paying top dollar for your olive oil, chances are its cut with other seed and vegetable oils. Rancid olives were likely used in its production since most olive oils are produced from olives from all over the country, be it Greece, or Italy, or Tunisia.
